European champion Bäcker reveals the secret of good bread - quality, taste and craftsmanship
Good bread begins with good raw materials. This is the conviction of Alexander Weinhold, baker and member of the baker's national team. As a European bakery champion, he knows exactly what is important in the quality of baked goods. At the European Championship Euroskills in Gdansk, the 22-year-old prevailed against twelve candidates from other countries and convinced the jury with his craftsmanship.
According to Weinhold, good bread is characterized by a crispy crust, a shiny crumb and an intense smell of bread. It has an intense taste and a juicy soft crumb. The quality and manual production also play a crucial role in rolls. While inferior mass productions can become hard or sticky after a short time, high -quality rolls keep their freshness over a longer period of time.
products from the craft bakers also have an advantage in terms of durability. Due to the use of natural raw materials and frequent use of sourdough, breads can be kept much longer. The right storage also plays an important role. Bread should best be kept in a clay pot or bread box to get your freshness. The storage in the fridge, on the other hand, is not recommended, as this affects the aroma and taste. A full rye full grain bread can be stored for several days.
If you have too much bread at home, it can be kept in the freezer without any problems. The thawing should then be slow at room temperature. Alternatively, old bread remains can be processed into breadcrumbs, croutons or bread soup. Bread chips are a delicious way to use old breads. For this purpose, bread slices are drizzled with a marinade made of olive oil and spices and baked in the oven until they are crispy. With a delicious dip, bread chips are an ideal snack for exciting football evenings.

Throughout Germany there are over 9,242 guild bakers with almost 235,200 employees and annual sales of 17.55 billion euros in bakeries and pastry shops.
